Mango Chia Seed Pudding

I’m celebrating the end of mango season with this Mango Chia Seed Pudding.

It’s light and fresh, but it’s also creamy and rich. It’s great for quenching your thirst on a hot day, and it’s a great way to use up all that extra mango you’ve got lingering in your fridge.

This recipe is inspired by the Sagoo Mango, a Malay dessert from East Coast of Malaysia sharing borders with Thailand. In this recipe I swapped out the Sagoo with chia seed to create this creamy, delicious sweet Malay treat.

Ingredients:

- Mango
- condensed milk
- Barista Coconut Milk (any brand)
- Chia seed

How to make it:


- Soaked chia seed in barista coconut milk (1/4 cup seeds to 1 cup liquid)

- Blend mango with two tablespoon of condensed milk and one cup of barista coconut milk  

- Mixed soaked chia seeds and blended mango together

- Serve with diced mango (add extra coconut milk - optional)

don’t forget to chill it before serving. 🥭
