Vegan Strawberry & Elderflower Agar-Agar

Ahh.. summer brings you the best of fruits, and agar-agar is my favourite way to freeze this moment and celebrate their beauty and freshness. Look at the colour! It's chemistry 101.
But what is agar-agar?
Agar-agar, also known simply as agar, is a gel-like substance derived from red algae. In western culture it’s similar to jelly/jello despite its Japanese origin, it was first brought over to Indonesia by Dutch traders in the 19th century. The Malay Indonesians, Malaysians and Singaporeans have been using this ingredient ever since.
This recipe brings the best of south east Asia and Europe by combining agar-agar with seasonal British fruits that I enjoy the most.
Ingredients:
- Agar-Agar strips (easily found in oriental shop)
- elderflower cordial (I use Belvoir)
- diced strawberries
- I dont add sugar in this recipe as Elderflower cordial is already sweet enough for me but if you’re sweet tooth add 3teaspoons of sugar
How to make:
- Place elderflower cordial and agar-agar strips in a pot and bring to a boil. Simmer until the agar-agar strips completely dissolve, then set it aside.
- In a mould place diced strawberries at the bottom of the mould
- Scoop the agar solution with a ladle and gently pour it onto arranged fruit. Let it set in a fridge for 30 minutes. Enjoy!
